Spring has sprung and sunny days have begun! If we had no Winter then Spring wouldn’t have been so pleasant! Now we can appreciate each sunny day, flower blossom, bird chirping and the beauty around us! We trust you will enjoy this season of hope and new beginnings! Talk to you again in summer!

The fifth PMA Fresh Connections: Southern Africa Conference & Expo, which was held on the 12th and 13th of August at the Cape Town International Convention Centre, was a resounding success attracting more than 500 delegates from 12 countries. This was a 35 percent increase over 2014 attendance, and included an even more diverse audience from across the fresh produce supply chain. All sectors of the industry had increased participation, especially retailers, growers and logistics companies.

Representatives from the BothaRoodt, Marco & Green Network Teams attended the conference and felt that it was very inspiring with loads of valuable insights relating to fresh produce marketing. It was great to catch up with many of our fellow industry colleagues as well. Sean Engelbrecht from the Green Network Team said what stood out for him was the fact that Africa is still a net food importer, the massive focus around the African continent and relating challenges and opportunities. Also very interesting is that eCommerce is playing a huge role – people are even opening up WeChat shops!

The event also saw an increased expo, both in size and the number of companies participating. New this year at the end of the first day was a beer garden reception, a top-rated feature of the conference providing excellent networking opportunities. Attendees heard from over 30 speakers/panelists in 13 educational sessions. Topics ranged from cold chain logistics to retail trends, growth markets in Africa, rebirth of national wholesale markets, e-commerce and transparency.
Featured speakers included:

  • Krysta Harden, Deputy Secretary of the U.S. Department of Agriculture
  • Senzeni Zokwana, South Africa Minister of Agriculture, Fisheries and Forestry
  • Justin King, former CEO of Sainsbury's
  • Dr. Christo Wiese, Chairperson, Shoprite/Checkers and PEPKOR
  • Mary Shelman, Director of the Agribusiness Program, Harvard Business School

The Women's Fresh Perspectives Breakfast was also a strong draw, doubling the attendance from the first year to over 140 delegates. We will definitely be there again next year!

Salad should be more than just iceberg lettuce and a few slices of tomato. Get creative when putting together salads for your family, they would love these fresh spring salads.

(Recipe: chefmom.sheknows.com)

Add a little color and sweet flavor to your salad in the form of strawberries or blueberries. With a base of spinach, add chopped strawberries, feta cheese, chopped walnuts (or slivered almonds) and a raspberry vinaigrette dressing for a colorful salad that kids of all ages will love.

(Recipe: chefmom.sheknows.com)

Include chicken in your Caesar salad for some extra protein. Add a side of crusty bread and it makes a complete meal. You can buy chicken strips or chunks that are already grilled in the frozen food aisle. Toss chicken and lettuce with Caesar dressing and add croutons for some crunch. Try the recipe below to make homemade Caesar dressing.

Makes 2 cups

  • 1-1/2 cups olive oil
  • 1 tablespoon red wine vinegar
  • 1/4 cup lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1-1/2 tablespoons anchovy paste
  • 1/2 teaspoon mustard powder
  • 3 garlic cloves, crushed
  • 3 tablespoons sour cream
  • 1/2 cup grated Parmesan cheese

(Recipe: 31 Meals Cookbook from Minimalistic Baker)

Homemade lightly-sweetened Honey-Roasted Pecans and a luscious, sweet-tart Berry-Balsamic Vinaigrette join fresh blackberries and really good crumbled blue cheese on a bed of tender, spring mix lettuce in this elegant appetizer salad. Want to make it a full meal? Add roasted shrimp, grilled chicken, or a juicy steak.

  • 142g spring mix lettuce
  • 340g fresh blackberries (could use blueberries)
  • 85g blue cheese, crumbled (could use chevre or feta cheese)
  • For the Honey-Roasted Pecans:
    • 1/2 cup pecans
    • 1/2 tablespoon butter
    • 1 tablespoon honey
    • salt
  • For the Berry-Balsamic Vinaigrette:
    • 1/2 cup fresh blackberries
    • 1 tablespoon sugar
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon honey
    • salt and pepper

For the Honey-Roasted Pecans: Preheat oven to 350 degrees. Melt butter in a bowl then add honey and pecans. Toss to coat then spread out on a parchment paper-lined baking sheet and bake for 5-6 minutes, or until golden brown and fragrant (watch carefully so they don't burn.) Sprinkle lightly with salt then set aside and let cool completely (can be made ahead of time.)

For the Berry-Balsamic Vinaigrette: Add blackberries and sugar to a food processor or blender then process or blend until berries are crushed. Let sit for a minute then add remaining ingredients and process or blend until smooth. Set aside (can be made ahead of time.) Divide lettuce between plates then top with blackberries, blue cheese crumbles, and honey-roasted pecans. Dress with berry-balsamic vinaigrette then serve.

Bon Appetite!

Since Spring is the season of hope and seeds blooming, we thought of sharing these words by Joel Osteen with you as our food for thought for this Spring Edition of our newsletter.

A Seed Of Hope

A seed of hope is the beginning of every good thing in our lives. Hope gives birth to the overcoming life. It always believes for the best, even in the face of the worst circumstances. For believers in Christ, hope is much more than a wish, yearning or a positive outlook, it is based on the promises of God found in His Word. They are promises to move on your behalf.

We can have hope in life no matter what surrounds us, because we serve a mighty God who cares, knows us by name (Isaiah 45:3), understands the desires of our heart (1 Chronicles 28:9), and who knew us before we were even formed in out mother’s womb (Jeremiah 1:5).

A while back we all watched the miracle of Flight #1549. Instead of ending in a disastrous crash, it gracefully landed in the Hudson River in New York City. The outcome was nothing short of a miracle. In fact, it is being referred to as “the miracle on the Hudson” because all 152 passengers and all the crew survived.

I thought about the passengers and what must have been racing through their minds in those final minutes before the impact. Amid the cries and prayers, I’m confident there was one thing they all desperately held on to — Hope.

Some hoped to kiss their spouse one more time, others to hug their son or daughter, and some to make things right with a friend or family member.

As the plane was about to hit the water, they knew their lives were at stake. Many were praying, and all were hoping for a miracle. Then the impact came and an amazing scene unfolded with passengers streaming onto the wings of the aircraft, soon to be stepping into rescue boats.

As I watched the amazing rescue, I could not help but think of the many people who feel their life is like this “plane”. They feel it is going down, leaving them only to hope that someday things might be different. Let me encourage you!

Perhaps you are facing setbacks with your job or relationships. Maybe you’re struggling financially or the pressures of life are just overwhelming you. If that’s you, there is still hope! God is for you, not against you. His resources are endless, and His power and love know no boundaries. God is on your side. Do not let the enemy, Satan, your own thoughts, or anyone else tell you anything different. Keep hope alive and never ever give up!

Look up and expect the miraculous keep hope alive.

I am praying for hope to come alive in you. God is a God of more than enough. He doesn’t have any lack. He always has a solution.

God is ready to speak to you, to encourage you and for some, rescue you.

Let me ask you where your hope is today. Is it in people? Your own abilities? Your job? Be encouraged and build your hope on nothing less than Jesus himself. He is your solid rock in which all other ground is sinking sand.

Hope today, hope now! Whoever hopes in God and trusts in Him, will never be disappointed.
